As I stood and baked bread the other day, it was as usual a small piece of dough over and to take a new plate to just two, three buns felt a bit unnecessary. So I decided to make a simple lunch-pizza. With only tomatoes!
Tomatoes are so phenomenally good, and at this time of the year, this years harvest is slowly showing up in stores in all colors and shapes.
You can use any type of crust you want, you do not need to set a bread dough to make it, even if the bottom gets very fluffy and lovely if you do.
2 large tomatoes
5-8 small tomatoes
1 tbsp tomato puree
After you have made your bottom and flattened it out. Drizzle with a little oil and spread out with a spoon or your hand. Then spread the tomato puree on top. Cut the tomatoes and onions into slices and lay over the dough. Season with salt, pepper and oregano. Bake in an hot oven (425°F) for 15-20 minutes until the bread is ready.
