I’ve always liked potato patties. When others in the school complained that they got it for lunch, I ate with pleasure a big portion. I do not know about if the vegetarians got a different recipe, but they were really good.
These potato patties have a little twist because they contain the same amount of cauliflower as potatoes. The taste very good and are healthy too! Serve with a big salad, gravy and “vegan meatballs” for a complete dinner.
500 g cauliflower (a small head)
500 g potatoes (4-5 large)
1/2 cup whole grain bread crumbs
1/2 teaspoon salt
1/2 teaspoon paprika
1 tbsp Onion powder
1 pinch black pepper
Cut the potatoes and boil in a saucepan. Cut the cauliflower into pieces and boil in another saucepan. When both are ready drain and mash the potatoes. Then place the cauliflower and mash it into the potatoes. Add the remaining ingredients and blend. Shape into patties with your hands (watch out, it can be a little hot!) And fry for 3-4 minutes on each side over medium heat.
