Believe it or not, I eat to much after-eight (the chocolate cover mint patties) when I was little. There was a lady who always made a cake with them and gave to us when we visited. Ugh, it still feels in the mouth when I think about it.
Because of this, I am always a little skeptical of mint flavor with chocolate. I understand it is a big favorite with most of my acquaintance. So a couple parties ago I made these goodies (which even I can manage to eat!).
When you bite through the chocolate you’re met by the creamy cashew filling with a hint of mint. Moderately sweet with the dark chocolate, which makes them perfect for a afternoon snack with a lovely big cup of tea!
And they are quick to make, because you put them in the freezer for 5 minutes. So if you have a sweet tooth and want to swing something real quick togather, this is a recipe that comes highly recommended!
Raw chocolate pepparmint patties
1/2 cup cashew nuts
1/4 cup of coconut oil
2 tablespoons liquid sweetening (agave syrup, honey …)
0.5-1 teaspoon peppermint (depending on how strong flavour you want)
75 g dark raw chocolate (goes well with regular vegan chocolate but then it will not be raw)
Grind the cashew nuts into flour. Melt the coconut fat and add together with the sweetening and pepparmint. Mix until it becomes a smooth, sticky mass.
Click the mass out on a baking paper and place in the freezer. Melt the chocolate in a water bath. Take out the patties from the freezer and dip one by one in the chocolate and place back on baking paper. Freeze again for a few minutes. Enjoy with a lovely cup of tea! If you don’t eat them all store them in the freezer.
