It’s a really bad weather out there today. The wind howls around the corners and the rain patters against the roof. A day like this is perfect to curl up on the couch with a shaggy blanket, light some candles and sip on a cup of hot chocolate!
To make it even cozier, I made chocolate with pumpkin spice. It was a real success! The spices include cinnamon, cardamom and ginger. Spices that truly warms the body from inside on a chilly fall day like this.
The recipe below is for one cup, but you can easily double the batch to be enough for two!
Hot pumpkin spice chocolate
Serves 1
1 cups of soy milk or any other plant-based milk anytime
1/4 cup chopped chocolate (I used 55% dark)
1 tsp pumpkin pie-spice mix (see recipe below)
Ev. sweetening if you want a sweeter chocolate or if you use darker chocolate.
Ev. soy whipped cream on top.
Heat up the milk so it is almost boiling. Remove from the heat and pour in the chocolate. Whisk until the chocolate has completely melted. Add the spices and make a final whisk. Pour into a mug and enjoy immediately!
Pumpkin Pie Spice
There are lots of different recipes online for this particular spice mix, that I use are what follows. Note that this amount goes a long way. Save in a glass jar and use when you want.
1/4 cup cinnamon
1 tbsp ginger
1 teaspoon ground cloves
0.5 tsp ground nutmeg
1/4 teaspoon ground cardamom
Mix all the spices in a jar and seal with a lid. Store as seasoning.
