Fall is here! A couple of days ago I woke up and thought it was Christmas Eve! I corrected the feeling really quick and asked it to return in a couple of months or so.
Because there are actually lots of things to enjoy in the fall. Farmers markets with everything they have to offer. Gardens filled with fruit and berries. And not least, the food gets warmer, richer and filled with more spices. In the summer, you want easy and good food, in the autumn, it is fine with a rich stew or a good lasagna with flavors of mushrooms.
So to get the real fall mood (Christmas stay away for a while please) I made a smoothie! I filled it with wonderful spices like cinnamon, ginger and cardamom. Or blend better known “pumpkin spice”. Here in Sweden it is not the known, but in the great land beyond the sea (USA), it is quite popular to put this spice in almost anything during the fall months.
If you also want to taste the fall, I suggest you make a batch of this smoothie immediately! And make some for friend too, it is good to be kind during the fall.
Pumpkin pie smoothie
1 large glass
1 cups of soy milk
1/2 cup cooked pumpkin
scarcely 1 teaspoon pumpkin spice (see recipe below)
1 tsp vanilla
Mix all the ingredients and top with a little extra cinnamon if desired.
Pumpkin Pie Spice
There are lots of different recipes online for this particular spice mix, that I use are as follows. Note that this amount goes a long way. Save in a glass jar and use when you want to.
1/4 cup cinnamon
1 tbsp ginger
1 teaspoon ground cloves
0.5 tsp ground nutmeg
1/4 teaspoon ground cardamom
Mix all the spices in a jar and seal with a lid. Store as seasoning.
