You can tell that summer has come because the rest areas start to fill up with families who pick up their packed food bags and sits down at the benches to take a rest during the trip. And even if you are not going to travel the next, is this salad perfect to bring to a potluck or as an side dish for grilling.
Pasta salad with sun-dried tomatoes and green soybeans
1 1/2 cups spelt pasta (also goes well with pasta made from mung beans, sweet potatoes or rice)
1/2 cup green soybeans (edamame)
1/2 cup mixed cooked beans
1/2 cup corn
1/2 cup chopped parsley
5 sundried tomatoes
A little oil
Cook the pasta as directed on the package. Chop the peppers and sundried tomatoes. If you use frozen soy beans, you can thaw them by rinsing them under cold water. Mix all ingredients in a large bowl, season with salt, pepper and possibly a little oil.
