I’ve started experimenting with my breakfasts a bit, both to make them more fun, but also smoother. Some days are a little tougher and then it’s nice if the breakfast is ready when you wake up, so you can eat it directly and get the blood sugar up from the night’s slumber.
This porridge is suitable if you know that you have a bit short of time next morning, or if you want to take the breakfast with you on the train / bus. You can even add in the berries and banana the night before if you like, so is everything ready to go!
Over night oats, with chia and strawberries
1/2 cups rolled oats
1 cup plant-based milk
1 tablespoon of chia seeds
1 tsp vanilla
Banana and berries for serving.
Mix oats, chia seeds, and vanilla in a jar or bowl with milk. Put in the refrigerator overnight. Stir in the porridge before serving. Serve with banana and fresh berries.
Tip! You can also use water or plant based yoghurt instead of milk for variation.
