Root vegetables are cheap and good food, and you can make simple dishes that are phenomenally good. One thingI usually do is roasted root vegetables in the oven.
This time I cheered the vegetables up with some onion and zucchini to get it to be extra filling. Then you do not serve much else for it to become a complete meal.
1 large onion
A little oil
A little salt
Cut all root vegetables into bite sized pieces and place in an ovenproof dish. Add a little oil and place in the oven at 435 °F for about 20 minutes. Cut the onion and zucchini into chunks and add to the other vegetables in the oven and even thyme and salt. Let go for another 10-15 minutes, until everything is soft. Check especially on the beets because they tend to take the longest time.
