Tomorrow is the waffle day here in Sweden and I’m already trying some new recipes! Here are two recipes to try, one that is vegan and another that is both vegan and gluten -free. Both recipes makes crispy waffles that works well with a little more filling topping or classic jam and cream .
Waffles ( vegan ) basic recipe
Makres about 8 pieces
Ingredients
2 cups milk ( soy, oat, coconut or whatever you have at home)
1 cups fine spelt flour
2 tablespoons soy flour
vanilla
salt
honey
Pour the milk into a bowl and whisk spelt and soy flour. Flavour ago with vanilla , salt and possibly a little honey if you want it a little sweet. Bake in a waffle iron until golden .
In addition to serving them with classic cream and jam, you can use fresh berries, nut cheese with chives or why not vanilla cream with a bit of crushed nuts .
Waffles with corn meal (Gluten Free !)
Makes about 8 pieces
This recipe comes from the book ” Varsågod ” by Ann- Christine Engblom and because I know it can be hard to find here comes the recipe.
Ingredients
1 cups water
1 1/4 cups corn meal
1 1/ 2 cups water
4 tbsp soy flour
2 tbsp oil
1/2 teaspoon salt
Boil 1 cup of water and pour into a bowl. Stir in the corn meal with a fork so that it begins to soak up the hot water. Then add 1 1/4 cup cold water and pour the entire mixture into a blender. Add remaining ingredients, mix everything until it is a smooth mix . Bake in a waffle iron until they are golden and crispy. I made these waffles in a Belgian iron, which makes square waffles.
I served these waffles with some fried vegetables and it made a lovely lunch. I also think it would have been really good to make a cream with sun-dried tomatoes , but unfortunately I had non at home. So I’ll try that next time. Anyway they are really good served with cream and jam too.
