A little unusual way to make a pie perhaps, but oh so good ! It all comes down to making a pie crust of grated potato and carrot instead of using , for example, whole wheat flour and water. Filled with goodies like spinach and green peas and it will be a perfect blend! It is also very convenient because you don’t have to make a special crust, and this makes it completely gluten. Remember to squeeze the potatoes thoroughly before you push it into the pie pan , otherwise it tends to bottom a little too watering.
You will need:
5 big potatoes
2 carrots
100g spinach
100g green peas
1 small onion
2 cups cashew cream
To do this:
Grate the potatoes and carrots and squeeze out the water. Spread and press into a pie plate. Chop and sauté the onion in a pan, add the spinach and green peas and let it all cook together. Add 1 cups cashew cream ( 1/2 cup ground cashews + 1/2 cups water ) and stir. Spread the mixture over pie crust . Bake in the oven at 425 ° F for about 35 minutes or until the filling has set and is golden.
