Whether you want to eat by yourself, invite your partner or the whole family to brunch, this is the menu! You can either select just a few things, or do them all and serve like a buffé. Perfect on a warm summer’s day or why not in the morning before going skiing? This brunch consists of three parts, a lighter, a fruit -filled and a more heavy version. Everything goes together, but also works independently, which makes it absolutely perfect.
Fresh juice with carrot, orange and ginger
3 carrots
2 small oranges
1 piece of ginger

Scones with apricots
2 cups of fine spelt

Tropical Smoothie with Coconut Water
1 cup coconut water
1 clementine
1/2 cups pineapple
1 banana

Scrambled tofu + sausages
1 small yellow onion
1 tablespoon oil for frying
1 package firm tofu (about 400g)
1 bell pepper ( any color ) , diced
1/2 cup soy cream
1 package vegan sausages
Cumin , a pinch of turmeric for color’s sake, herb salt , pepper
Do : Start by sauté the onion in the oil. Crumble the tofu and put it in the pan. Stir constantly as tofu lightly burning the bottom of the pan. Try to let it get a little color before adding the spices and soy cream. Stir well. Sizzle together on medium heat, stirring every few minutes. Add peppers towards the end for a little extra color. Fry the sausages.
Grilled tomatoes with thyme
3 large tomatoes
fresh thyme

Roasted potatoes with rosemary
4 large potatoes , cut into quarters
Rosemary oil
