Making smart choices when you’re tired is not easy. But it isn’t impossible, as long as you have a plan. Today was a day filled with stuff which made the time in the kitchen was minimal . Luckily, I ran into the ICA to get eco bananas, and at the same time I picked up a couple of clever solutions to make supper as smooth as possible.
ICA has many new pre-cut vegetable mixes and I grabbed on that said ” Simply Proper ” which included peppers, zucchini , leeks and cabbage. Vegetables that both can be eaten fresh and cooked, perfect!
When I finally got home and my stomach screamed “Give me food !” I poured up a large glass of water and added a little lemon squeezed to it, which I drank while I cooked the food. A smart way to suppress the worst hunger. So whats for dinner? I boiled some spelt pasta while I poured the vegetables in an ovenproof dish and baked in the oven at 435 ° F. Meanwhile, as this cooked I blended together a quick pasta sauce of a little tomato paste and a red pepper-walnut topping I had in the fridge. Spiced it with a little lemon , salt, black pepper, pizza seasoning (oregano , basil and marjoram) and a teaspoon of honey. Mmmmh so good!
When the pasta was done, I took out the vegetables from the oven, they were not grilled yet but was wonderfully warm . Then I just to loaded up everything in a bowl, sprinkled with nuts and fresh small tomatoes.
